Mushroom And Spinach Cauliflower Rice Banting Recipe

You've heard of mushroom risotto, even a mushroom and spinach risotto! This recipe replicates that but with fewer carbs, yassssss! Ingredients: 1 cauliflower head to be grated 2-3 tbsp of olive oil 1/2 cup chopped onion 2 minced garlic cloves 1 packet of mushroom 2 handfuls of spinach 1 stick of thyme Salt and pepper to taste Method: 1. Chop Cauliflower into florets then grate it. 2. Dice onion and chop mushrooms into slices 3. Heat olive oil in a pan and add onions and cook until soft. 4. Toss in mushrooms and saute until cooked. Then add garlic, and stir. 5. Add in spinach. Then season with salt and pepper. 6. Once the spinach is wilted along with other ingredients, transfer it into a dish. 7. Add oil in the empty pan, then add cauliflower rice with salt and pepper. Stir until cauliflower rice has is soft. 8. Return the mushroom, spinach into the pan the pan with the cauliflower and lower heat to 3. Combine all ingredients and leave on low heat for 2 minutes. 9. Serve mixture with feta. Enjoy!
