#Carrotporiyal or carrot curry or Carrot Fry with Coconut is a very easy recipe which can be cooked with readily available ingredients. cooked carrots garnished with coconut tastes simply awesome when served with hot rice.
Coarsely grind ginger, garlic and coconut
Im using grated coconut so added it later. If you are using pieces u can grind all three together
Pressure cook carrots for 1 whistle.
Allow it to cool and then open the lid.
For seasoning, Add oil to a pan.
Add Mustard, Cumin Urad dal, hing and red chilies
Once they change color add the Coconut paste and fry
Add boiled carrot and Mix well
Add Salt and turmeric
mix well
Garnish with coriander.
Tastes good when served with rice, roti, pulkha etc
