I absolutely LOVE baking with olive oil, and these citrus olive oil madeleines are bright and sweet with a nice subtle hint of olive oil! The citrus really helps to bring out that olive oil flavour a bit more and adds a beautiful contrast to that beautiful flavour! And all these need is a light dusting of powdered sugar on top to give them a nice dusted snow look which really ties into the season (especially here). • • • #shorts #homebaker #madeleines #citrus #lemon #orange #food #foodie #viral #fyp #fypシ #foryou _________________________ ⭐️•Makes 18 Madeleines•⭐️ • • • 🥐•Citrus Olive Oil Madeleines•🥐 ➡️ 2 Eggs ➡️ 7 Tablespoons (88g) Sugar ➡️ 2 1/2 Tablespoons Orange Zest ➡️ 1 1/2 Tablespoons Lemon Zest ➡️ 1 3/4 Teaspoons Vanilla Extract ➡️ 1/2 Teaspoon Salt ➡️ 7 1/2 Tablespoons (117mL) Olive Oil ➡️ 3/4 Cup + 2 Tablespoons (105g) Flour ➡️ 3/4 Teaspoon Baking Powder • • • ⭐️Note: Since the measurements for this recipe are very precise, I would definitely advise you to weigh out the sugar, olive oil, and especially the flour to get the best results. If you don’t have a scale, just fluff your flour then spoon it into your measuring cup / spoons. • • • 1️⃣. In a mixer bowl, combine the eggs and sugar together and whip until light, pale and tripled in volume. Then add in the orange zest, lemon zest and vanilla extract for some great flavour. 2️⃣. Sift flour, baking powder, and salt. Then add half of the dry into the whipped eggs and gently fold that in. Add the olive oil and carefully mix that in. Lastly, fold in the remaining dry mixture until you have a perfectly smooth batter. 3️⃣. Chill the batter in the fridge until thickened. This takes roughly 45 minutes. Then grease a Madeline pan and spoon about 2 tablespoons of the batter evenly between them. 4️⃣. Bake at 375 Fahrenheit for 8-11 minutes until golden on the edges and they have a hump on top. If you overbake these, they will be very dry so be sure to keep a close eye on them. Allow to cool. 5️⃣. Dust with a little powdered sugar and enjoy! _________________________ 🍽•Extra Tips & Advice•🍽 ➡️ Traditionally the eggs help to leaven the cake, but just a bit of baking powder helps it to rise a bit more. ➡️ Feel free to omit the zest if you wish or just do one or the other. It’s your choice, but I find that the hint of citrus works so well! ➡️ Chilling the batter is important to thicken the batter and rise up faster! ➡️ Be sure to gently fold in the dry ingredients because you don’t want to deflate the batter which will make dense madeleines. ➡️ If you don’t want the olive oil flavour, just replace the olive oil with 25% more butter (so about 9 tablespoons). ___________________________ If you would like to see more of my creations and recipes, check out my Instagram, Facebook and TikTok pages.
