TEMPERING THE CHOCOLATE: MELT THE CHOCOLATE IN A BOWL SITTING IN HOT WATER ON LOW FLAME ON THE STOVE KEEP STIRRING IT AS SOON AS 3/4 MELTS REMOVE FROM THE WATER. STIR MORE UNTIL THE REST MELTS.
