Lamb Sunday Gravy

One of Chef Alan's favorite pasta sauces, Sunday gravy it a meat lovers paradise. Here he uses 3 different cuts of lamb in the same dish: saratoga (a roast from the neck/shoulder) sausages, and tongue. You should feel free to use different cuts you like. Link to the recipe in comments.
